Instructions
Step 1
Add dry ingredients in a bowl and mix until combined.
Step 2
Melt coconut oil in microwave for 20 seconds.
Step 3
Add coconut milk, apple cider vinegar, melted coconut oil and diced banana into dry mixture. Mash banana while mixing together until smooth.
Step 4
Coat a non-stick pan with a little bit of coconut oil over medium-high heat.
Step 5
Once hot, pour 1/4 - 1/3 cup of pancake mixture onto pan.
Step 6
When you start to see bubbles forming towards the middle of the pancake mixture (about 2 minutes), flip pancake and continue to cook for 30-60 seconds.
Step 7
Serve with maple syrup.
